Candied Bacon Pancakes and Chocolate Chip with Nutella Maple Syrup
Ingredients for Candied Bacon
• Thick cut bacon (Six strips)
• Packed light brown sugar (1/4 cup)
• Cinnamon (1/4 teaspoon)
• Smoked paprika (1/4 teaspoon)
• Cocoa powder (Half a teaspoon)
Ingredients for Syrup
• Nutella (Half a cup)
• Maple syrup (Half a cup)
• Unsalted butter (Couple of tablespoons)
• Vanilla (Half a teaspoon)
Ingredients for Pancakes
• Softened cream cheese (2 ounces)
• Softened butter (Couple of tablespoons)
• Vanilla (Half a teaspoon)
• Couple of eggs
• Buttermilk (1 ½ cups)
• All-purpose flour (Couple of cups)
• Sugar (1/4 cup)
• Baking powder (2 ½ teaspoons)
• Salt (Half a teaspoon)
• Partially sweet chocolate chips (3/4 cups)
Directions for Preparation
1. Heat the oven at 175c. Take a baking sheet and line it with foil. Now take a non-stick cooking spray and spray it over wire cooling rack. Place this rack over baking sheet. Now one by one place the bacon strips over wire rack at half an inch distance from each other.
2. Take a small bowl and mix cinnamon, cocoa powder, brown sugar & paprika together in it. Now sprinkle this mixture on top of bacon. For next 15-20 minutes bake the bacons till they become crisp and the topping begins to bubble. Set them aside over the rack to cool down. Once cold, chop them and set aside.
3. Take a small saucepan and mix maple syrup, vanilla, Nutella, and butter together in it. Heat this pan at low temperature till the butter melts and stir till the mixture becomes smooth enough. Set it aside.
4. Take a flat griddle and heat it low-medium temperature.
5. Take a medium bowl and mix butter, vanilla and cream till they become smooth enough. Now add the eggs one by one and beat them together till mixed properly. Add some buttermilk and mix again.
6. Take a bigger bowl and mix sugar, salt, flour and baking powder in it. Now add chocolate chips & chopped bacon and then add the wet ingredients. Stir them together till mixed properly and the whole thing becomes smooth.
7. Now spray some non-stick cooking spray over the griddle. Scoop the batter (1/3 cup) and cook it for next 2-3 minutes over griddle on one side till it becomes golden brown.
