Peach and Ice Cream Pudding

What You Need

• ½ cup of sugar
• ½ cup of milk
• 3 cups of fresh or frozen peaches, sliced and peeled
• 1 cup of all-purpose flour
• 2 teaspoons of baking powder
• ½ teaspoon of ground cinnamon
• ½ teaspoon of salt

For The Topping

• ½ cup of sugar
• Half-and-half cream
• ½ cup of packed brown sugar
• 1 ½ cups of water
• 1 tablespoon of butter
• ¼ teaspoon of ground nutmeg

How to Prepare

• Mix the sugar, flour, baking powder, salt and cinnamon in a large bowl. Now mix in the milk till the ingredients just combine. Mix the sliced peaches into this and pour the mixture into a greased 8 inch square baking dish.
• For the topping, mix the water, sugar, brown sugar, butter and the nutmeg in a large saucepan. Bring this to a boil and remember to keep stirring till the sugars dissolve. Now pour this on top of the mixture in the square baking pan.
• Now bake at 205 degrees Celsius for 40 to 50 minutes or till the filling is bubbly and a toothpick inserted into the topping comes out clean.
• Serve this warm with a dollop of cold cream on top and enjoy!
